What makes KWL Legacy Farms eggs better?

Why are the eggs labeled “unwashed”?

Eggs have a very complex system to keep them safe from spoiling; the ‘bloom’ and cuticle, the shell, multiple membranes inside the shell, the viscosity of the white, there are a lot of defense mechanisms. In a clean, fresh egg, there is rarely internal contamination. You can feel confident that your eggs are safe.
When we gather the eggs, we gently wash off any dirt, straw, and poop that may have been on the eggs when they are gathered. BUT we do not say we have ‘washed’ the eggs. This is because some states have specific temperatures of water and chemicals that are required when washing eggs. So we have ‘rinsed off’ your eggs. If we were to go through the chemical process for washing, the protective bloom would no longer be on the eggs and they would not last as long before spoiling.
We ask you to please rinse off each egg when you get ready to use it. Additionally, after you have rinsed your egg, please crack it into a separate bowl, not directly into your ingredients. You should do this for all your eggs, not just those you get from us.
How long will my KWF Legacy Farms eggs stay fresh?

Eggs from KWF Legacy Farms will easily be good for two to three months! This is due to leaving the bloom (the protective layer) on the shells instead of chemically washing them. To keep your eggs as fresh as possible you should keep them refrigerated, small end down, in their box in the main part of your refrigerator.
The best way to tell the freshness of an egg is to crack it open. Always crack it open in a separate bowl than what you are cooking. A fresh egg has a tight, high yolk and thick white with no foul smell, while a bad egg smells bad (like sulfur) and looks discolored.
What if I find a spot in the egg?

When you crack open the egg you may sometimes see a brown or red spot in there. That could be a pigment, protein, or meat/blood spot. These are found occasionally on an egg yolk and merely reflect either the genetics or age of the hen. (These have nothing to do with fertility). They are caused by any number of different normal biological processes in the hen. You see these more often in brown shelled eggs because those eggs are harder to effectively candle. The bottom line, the eggs are totally safe to eat and the spots do not change the flavor or texture of anything you are fixing. You can also simply remove the spot with a spoon before cooking and enjoy the rest of the egg!
Are your eggs organic or vegetarian?

No, our eggs are not considered organic or vegetarian, however, we do not add hormones or steroids to our duck or chicken diets. Chickens and ducks are omnivores and require protein to make eggs. We feed them bugs and they find bugs on their own in their pasture as well. We do not specialize in organic feeds or organic gardening ourselves, so we do not say that our eggs are produced by hens that eat organic foods.
